To make matters worse, it’s the wrong kind of fat; since so much of our food comes from animal products, much of the fat we eat is saturated fat.

It has been estimated that each day, the average person consumes one-third of a cup of pure fat. Each time we stop in for a quick cheeseburger with fries and a shake, we’ll consume 75 grams of fat.

It wasn’t always that way. In 1900 only 30 percent of the calories in our diet came from fat. By the 1960s, however, our fat intake was up to 44 percent. Since then, of course, we’ve become a cholesterol-conscious society, and we have started to improve. At present, its been estimated that 37 percent of our daily calories from fat. It’s progress, to be sure, but it’s not good enough, particularly since half our daily fat is the saturated variety.
